Title: Low-Fat Macaroni and Cheese

1 1/2cElbow macaroni
2tbMargarine
1/4cFinely chopped onion
2tbAll-purpose flour
2cSkim milk
2cLow-fat cheese
1mdTomato, sliced
 dsPepper
  Salt to taste

Cook macaroni according to package directions; drain. For cheese sauce: In a saucepan, melt margarine. Cook onion in margarine until tender. Stir in flour, salt and pepper. Add milk all at once; cook and stir until thick and bubbly. Cook and stir one to two minutes more. Add cheese; stir until melted. Stir macaroni into cheese sauce. Turn into 1-1/2 quart casserole. Bake at 350 degrees for 30 minutes or until heated through.
